The Chassagne-Montrachet Premier Cru les Chaumées 2018 from the Cellier aux Moines estate comes from small berries harvested at full maturity, well colored and with a perfect balance between sweetness and acidity. With great finesse, the bouquet reveals subtle floral fragrances. Pure, the mouth seduces with its clarity, its tonicity and its persistence.

The Chassagne-Montrachet Premier Cru les Chaumées 2018 from the Cellier aux Moines estate highlights all the uniqueness of the Chardonnay on this extraordinary Burgundy terroir.

The grapes are sorted a first time in the vineyard and if necessary a second time in the cellar. Following a gentle pressing, the must is left to settle by gravity for 12 hours. Vinification is carried out in barrels (50% of which are new barrels) as is aging for 18 months, accompanied by some stirring. A third of the barrels are of larger capacity (400 liters) than the traditional 228-liter Burgundy barrel, in order to optimally integrate the woodiness.
